Shell Bean Recipes| Shell Bean Stew with Olive oil

Stew recipes are indispensable parts of mediterranean cuisine. They are easy to make, delicious, nutritious, healthy, and today, I would like to introduce one of my favorite shell bean recipes: Shell bean stew with olive oil.
Especially, I crave stews and soups in winter. As you would probably also confirm, on cold days, the stews and soups taste much better. After a hard-working day, you come home and within 45 minutes you have a hot, healthy meal in your hands.
Let us take a closer look at our ingredients!


Of course, the first ingredient you need is shell beans. Unfortunately, we are not able to find fresh shell beans all year round. However, we can use frozen (fresh), dried, or canned shell beans. Today, as I could not find fresh shell beans, I used canned shell beans. If you want to use dried shell beans, you have to place the beans in water and wait 24 hours, until they are soft, before you use them for this recipe.
For a better result, I suggest you use a hand blender for the onion. The smaller the onions, the better the taste.

Shell Bean Stew Recipe
Instructions
Sauté the onions.
Heat olive oil over medium-high heat and sauté the onions for 2-3 minutes.
Add the tomato paste, salt, black pepper and cook for 2-3 minutes.
Add carrot, potato, mix well and cook for another 2-3 minutes. Stirring occasionally.
Add the tomato and mix well.
Add the beans, 500 ml water, and bay leaf. Mix well and cook for 30-40 minutes over low heat.
Your shell bean stew is ready to enjoy. You can serve with chopped fresh parsley and your favorite bread.
