Today, when I was looking for delicious recipes for you, I found this spiced chickpea stew recipe that will definitely be on my and your Top 10 list. YOU HAVE TO TRY IT!

When I look at my top ten list of vegan recipes, I see chickpea recipes in many places. The funny thing is, I hated chickpeas when I was a kid. I hated a lot of legumes like peas, chickpeas, and a few others. My mother always made me eat them. She always said, “Legumes are healthy, you have to eat them. ” Today, chickpea recipes are my favorite recipes. Always listen to your mother!

Are chickpeas healthy?

For vegetarians and vegans, legumes are a good source of iron. With 6 milligrams, the dried chickpeas contain a lot of trace elements. With 2. 2 milligrams, the can-based variant also makes an important contribution to blood formation and oxygen transport.
Dried chickpeas impress with calcium (124 milligrams) and phosphorus (332 milligrams). The balanced combination strengthens bones and teeth.

You can also make chickpea flour from chickpeas. Chickpea flour is good for baking. The flour can be used alone or mixed with other types of flour. The proportion of carbohydrates is still high, but overall it shows a more basic effect. The risk of acidification of the body can be positively influenced by basic foods. The stressful side effects of acidification, such as heartburn, can be reduced with chickpeas.

Ingredients for Spiced Chickpea Stew Recipe

  • 500 g canned chickpeas.
  • 1 big yellow onion, finely chopped.
  • 400 ml (1,5 cup) vegetable stock.
  • 350-400 ml coconut milk
  • 1 cup fresh spinach. You can use kale if you do not have fresh spinach.
  • 50 ml extra virgin olive oil
  • 2 garlic cloves, finely chopped
  • 5 g ginger, finely chopped
  • 1/2 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon turmeric
  • 1 teaspoon chili flakes or powder
  • 3-4 leaves of fresh mint

INSTRUCTIONS

  • Heat the olive oil in a large pot over medium heat, and add garlic, ginger, salt, black pepper, and onion and sauté for 3-4 minutes.
  • Add turmeric, chili flakes, and chickpeas, and cook for 10 minutes, stirring frequently. They will start to break down and get a little crisp. If you want to garnish with chickpeas, remove about a cup of chickpeas and set them aside.
  • Add the coconut milk, and vegetable stock and cook for 20-25 minutes over low-medium heat, stirring frequently. If you want the stew a bit thicker, cook until you get the desired consistency.
  • Before you remove the dish from the heat, add the spinach and cook for 2-3 minutes.
  • Your delicious spiced chickpea stew is ready to enjoy. Place the dish in a bowl, ADD A FEW DROPS OF LEMON JUICE and serve it with freshly chopped coriander(or fresh mint), yogurt, lavash, pita, or your favorite bread.

Note

  • If your vegetable stock is salty, do not add salt. Before you remove the dish from the heat, taste it.
  • To me, one of the most important points is lemon juice. Add a few drops of lemon juice.
