Vegan Chickpea Curry Recipe
  • 400 grams chickpeas (Canned)
  • 1 onion (onion. Chopped)
  • 2 potatos (small)
  • 1 carrot (peeled and diced)
  • 2 cloves garlic (minced)
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1 teaspoon curry
  • 100 milliliters water
  • 400 milliliters coconut milk or coconut cream
  • 4 tablespoons olive oil
  • 1/2 lemon (juiced)
  • 50 grams coriander (fresh)
Instructions
  1. Heat olive oil in a large stockpot over medium-high heat. Add onion and sauté for about 2-3 minutes.

  2. Add chickpeas, give it a good mix and cook for 2-3 minutes.

  3. 4. Add potatoes, carrots and cook for another 2-3 minutes. Stirring occasionally.

  4. Add curry, garlic, black pepper, salt, HOT chili powder, and juice of 1/2 lemon. Mix well again and lower the heat.

  5. Over low heat, add coconut milk and 100 ml HOT water. Mix it and cook it for another 10 minutes until the potato is done. After 10 minutes add some chopped coriander.

  6. Your Vegan Chickpea Curry is ready to enjoy.  Serve it with rice.
