Ingredients
  • 1 cup Red lentils (200 g)
  • 2 cups Vegetable broth (500 ml(17 ounces))
  • 1 can Full-fat coconut milk (400 ml)
  • 4 Fresh tomatoes (Peeled and chopped)
  • 4 cloves Garlic (Minced)
  • 10 grams Fresh ginger (Minced or grated)
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground cumin
  • 1/2 teaspoon Chili Flakes
  • 2 teaspoons Curry Powder
  • 1 teaspoon Garam masala
  • 1/2 Lemon (Juiced)
  • 1/2 cup Fresh cilantro (Chopped)
  • 2 tablespoons Olive oil (or coconut oil)
Instructions
  1. Sauté the ginger and garlic in hot oil for about 2-3 minutes.

    Add the ground spices and cook for another 2-3 seconds, stirring frequently.

    The vegetable broth, red lentils, crushed tomatoes, CLOSE THE LID and cook for 20 minutes OVER LOW HEAT, or until the lentils are soft and tender.

  5. Add coconut cream and black pepper and cook for another 6-8 minutes UNCOVERED over love heat. As my vegetable broth was salty, I did not add salt.
