What is an imitation crab?

Crab sticks, imitation crab (meat), or seafood sticks, originally known as kanikama in Japan, are a type of seafood made of starch and finely pulverized white fish (surimi). Surimi, which means “ground meat,” is used to make imitation crab. White-fleshed fish and other fish body pieces are mashed into a paste to make surimi. Artificial flavors are then added before the final step in this heinous procedure. The final step is molding the paste to resemble crab flesh.
